is there any way to upgrade, change or do anything to the software on a STU 700 box?

If that is a UEC 700, Used by the pay providers, then the answer is NO.

The early UEC receivers 642's also had something called "Multichoice" which was South Africian software, used in there pay services, Some of these receivers found there way to Australia. and some software was available, but I,m unsure if the "multichoice" hi-breed, extended to the 700 series

so you could just change a setting and it would use diffrent softwere.
its prob is not on the 700. i just fort you mite be able to do something to it as it has a 9-pin male and 9-pin female soccets on the back

They will do nothing mate, its a pay box. A FTA box is cheap? just buy a secondhand one to see if you can grasp this hobby?
